Tiramisu

Yesterday I made again one of my wonderful tiramisu! So I decided to share this recipe with you!
The basic recipe I found on http://miminecuisine.canalblog.com/, which is a wonderful cooking blog (in french). But I changed it slightly and hopefully made it a bit better, so here I am offering it to you!!



Here is what you need to get a real nice tiramisu for 8 people. It works also if you are only 2 persons, as you can keep this in the fridge up to 4 days :


  • a good 30-40min for the preparation
  • 8h in the fridge before eating (necessary otherwise it will be liquid and icky). The best is to prepare it in the evening to let it rest in the fridge overnight.                                                                  




  • a 35x22 square plate
  • a small bowl
  • a medium bowl
  • a big bowl
  • a real Italian coffee maker (moka pot, type bialetti, the ones that produce strong coffee via pressure release, not one of this crap water maker with a faint taste of coffee)
  • electric whisk
  • a normal hand whisk
  • a grater



  • coffee
  • 100g of dark chocolate
  • 500g mascarpone (you can buy it premade in many stores) 
  • 4 eggs
  • 60g sugar
  • malibu (the rum+coconut one)
  • 200g ladyfingers (that's them on the right!) 
  • bananas, nuts, raspberry or whatever fruit you want


Once you have all this, you're ready!


  • Make 30cl of strong coffee. Pour it in the small bowl and put it in the freezer.

  • Separate white and yulk of the eggs, with the white in the middle bowl and the yulk in the big bowl.
  • In the big bowl, add the sugar to the yulk. Mix them well until the mix takes a creamy color. 

  • Add little by little the mascarpone while whiping. Once all the mascarpone has been added, keep on whiping for a bit to make sure the mix is very homogeneous, it should not be very liquid but rather a pretty sticky batter.

  • In the middle bowl, beat the whites to make a very light and very puffy "snow".

  • Incorporate the "snow" (for lack of a better word) delicately to the mascarpone mix in the big bowl. Whip the mix VERY gently to get a uniform batter.  DO NOT use the electric whisk for this step. This step should render the mix a bit more liquid.



  • Take the coffee from the freezer, by now it should be cold. Add to it some malibu rum and mix a bit. Depending on how you like it, the quantity can vary. I personally put 4 big spoonfuls (a good 10cl).
  • Put the big square plate in front of you, and dispose the ladyfingers in it to assess how many you will need and how do you want to place them. It is important that they all cover well the plate. If your plate is a bit too small, you can easily cut off some of the biscuits to make sure they fit. As long as there are no big gaps in the plate.


  • Take each ladyfingers one by one from the plate, dump them quickly in the coffee/rum liquid and put them back in the plate.
  • Pour a bit more than half of your mascarpone mix on your layer of ladyfingers. It should not spread well automatically so use a spoon to spread it well uniformly all over the ladyfingers. It should cover the ladyfinger entirely and you should not be able to see the ladyfingers anymore. 

  • Grate 50g of chocolate over the layer of mascarpone mix in the plate. You can put more than that if you like :) But make sure that you have at least a layer of chocolate all over.

  • Dump the rest of the ladyfingers in the coffee/rum and dispose a 2nd layer of ladyfingers, with the same disposition as the first layer, on top of the chocolate.


  • At this point you should have some coffee/rum left. Pour the remaining coffee/rum with the rest of the mascarpone mix and whip it a bit (again do not use the electric whisk). The new mix should then be much more liquid.

  • Pour the final mascarpone/coffee/rum mix on top of the 2nd layer of ladyfingers and again make sure you spread it uniformly. 
  • Cover once more with the 50g(or more) of grated chocolate that you have left. 
  • Slice up a banana, and dispose them on top of the chocolate as you like. Add nuts, raspberries, or strawberries (or any fruit you want).


  • Put in the fridge and wait 8h!

Disclaimer: your tiramisu will NEVER look like these premade pictures where the layers are very distinctive. If the mascarpone mix is well done, the only layer you should see is the chocolate delimitation but you should never see the ladyfingers.

Note that if you have made this the night before, it is absolutely delicious to serve it for breakfast. If the alcohol was dosed properly, you should barely taste it, and so in no way should it impaired you from being very efficient at work!
