Apple Compote

Although I give here the recipe with apples, which is the classic one, this can be also made with bananas, pears, rhubarb, blueberries or cranberries...
This is an ideal little dessert, easy to make, and very healthy. It's also good for babies. Rather than buy the premade ones, you can make your own.





For 20 portions (a good plate):

Time it takes:

  • 15min to prepare
  • 30-40min to cook

Material:
  • a big pot
  • a wooden spoon 
  • a peeler
  • a good knife

Ingredients:
  • 10 apples "Belle de Boskoop" or "Renette" (or any apples with red or brown skin, do NOT use granny smith or any green apple)
  • 200g raisins 
  • brown sugar (optional, depends on your taste)
  • 1 glass (2 cups) of water
  • Gran Marnier or rum (optional)
  • cinnamon

Recipe:
  • Peel the apples.
  • Remove the core and cut them in small chunks.
  • Throw the chunks in the pot.
  • Add 1 cup of water.



  • Let it cook on medium heat with a cover on.
  • In a bowl, put the raisins and let them marinate in the alcohol for 5min.
  • Add the marinated raisins and their "juice" to the apples.



  • Let it cook for 15 min.
  • Add the other cup of water (if there is no juice, if you find the apples to be a bit liquid then skip this step) 
  • Add the cinnamon.
  • Let it cook for another 15-30 min.
  • If you find it too sour, you can add some brown sugar and let it cook for an extra 5 min or so.




Note:
  • Do not forget to stir from time to time or the apples will stick to the pot and it will be icky.
  • Depending on the consistency you want, you will have to change the cooking time. If you want a really puree compote, you will have to let it cook for at least 1h and stir it quite well.
