What you need to make them:
- 10min to prepare
- 20min to fry
- a big pot
- a whip
- a spoon
- a deep fryer or just a big pan
- 300g (2.5 cups_ flour
- 175g (7/8 cups) sugar
- 20cl (4ts) water
- 10cl (2ts) Grand Marnier (or orange blossom/flower water http://mideastfood.about.com/od/glossary/g/orangeblossom.htm http://en.wikipedia.org/wiki/Orange_flower_water if you don't know what it is)
- 4 eggs
- 125g (1/2 cup) butter
- a pinch of salt
- 0.5l (2 cups+5 ts) of vegetable oil
- honey or maple syrup (optional)
On to the recipe:
- In the pot, mix butter, water, salt and 125g (5/8 cup) sugar.
- Put on the heating plates and mix well until it boils.
- When it boils, remove the pot from the plates and dump the flour all at once
- Put it back on to the plates at mild intensity while keeping on whipping. You should get a fairly thick batter that sticks a lot, but by heating it it becomes easier to mix.
- Add the eggs one by one while keeping on whipping.
- In the pan/deep fryer, pour the oil and heat it. The oil should NOT boil.
- In the pot, which should still be on mild heat, pour the Grand Marnier, and mix.
- Grab a spoonful of the batter and throw it in the hot oil. If it starts bubbling around that means your oil is hot enough. Make a few other spoonfuls and throw them in the oil.
- Leave each spoonful in the oil for about 2-3min until they become golden.
- Remove each spoonful from the oil and lay it to cool down on a paper towel to absorb the extra oil.
- Repeat until you are out of batter.
- Sprinkle sugar on the little beignets.
- Soak them in honey or maple syrup.
