Anise biscuits

This is recipe for little dry biscuits with a taste of anise. It comes from the french town of Honfleur and in french are called "Biscuits des Anisetiers de Honfleur". They are perfect to accompany a coffee or tea or just to snack on in front of the TV. Dry outside but soft and fluffy inside, you can keep them easily for a week in a dry spot.



What you need:

  • 5 min to make
  • 15 min to cook each batch at 180°C (350°F)

Material:
  • electric whisk
  • big bowl
  • spoon
  • cookie sheet
  • parchment paper 

Ingredients:
  • 250g (2 cups) flour
  • 250g ( 1 1/4 cups) white sugar
  • 10g (1.5 tbsp) anise (you can put more if you want a stronger taste)
  • 4 eggs
  • powdered sugar or sugar cubes or hazelnuts or chocolate chips

Recipe:
  • Mix well eggs and sugar
  • Add flour and anise and whip very well to get a homogeneous batter

  • Put some parchment paper at the bottom of the cookie sheet and dispose on it several spoonfuls. Watch out to spread them enough as the batter is a bit liquid and spreads out and the biscuits rise in the oven.

  • Add on top whatever you want. The original recipe says to cut little sugar cubes in chunks and put that on top of the biscuits. I personally like to put hazelnuts and powdered sugar. You can even try with a chocolate frosting or chocolate chips.

  • Leave it 15min (not more) in the oven at 180°C (350°F).
