Meringues

Here is the super easy recipe to make delicious fluffy inside crumbly outside meringues.



You need:

  • 10 min to prepare
  • 45 min to cook

Material:
  • an electric whisk (necessary unless you're really strong and have great arm muscles!)
  • a pot
  • a bowl that can fit in the pot
  • a spoon
  • a cookie sheet
  • parchment paper

Ingredients for about 10 medium sized meringues:

  • 2 egg whites
  • 160g (3/4 cup) white sugar 

Recipe:

  • Preheat the oven at 150°C (300°F)
  • Put some parchment paper on a cookie sheet. Set it aside.
  • Make a bain marie (water bath) with the bowl and the pot. Lay just a bit of water in the pot, to make sure that if the water boils it does not spill in the bowl. The ideal temperature of the bain marie is around 60°C (140°F). The bain marie is indispensable. If you don't do it this way you will never get good meringues.
  • While heating up the bain marie, whip without interruption the egg whites and the sugar. Stop only when the whites are well beaten, very thick and that you can get little peaks all over when you stop beating them.




  • Once you reach that state, IMMEDIATELY, take a spoon and spread little mount of whites on the cookie sheet. If you do not do this fast enough, the whites will attach at the bottom of the pan and game over.

  • Place the cookie sheet in the oven for 5-10min at 150°C (300°F) maximum! 
  • Turn off the oven after 5min and leave the cookie sheet in the oven for 40-50min.
