Coco Rocks or Coco Pyramids

Here is another super easy recipe! These little coco pyramids are the easy way to make your kid happy (I know it was always a pleasure when my mom would buy me some). They also keep pretty well.



Here is what you need for about 10 little pyramids:
  • 10 min to prepare
  • 10 min at 180°C (350°F)

Material:
  • electric whisk
  • 2 bowls
  • a cookie sheet
  • parchment paper
  • a rubber spatula or a ball whisk (whisk is much better than the spatula)

Ingredients:
  • 1 egg white
  • 100g (1/4 lbs) coconut flakes 
  • 100g (1/2 cup) white sugar if you don't add any flavor, 75g (3 tbsp) otherwise
  • possible flavors: nutella or peanut butter or marmalade or honey

Recipe:
  • Start the oven (it takes a while to heat up to 180°C)
  • Mix the sugar and the coconut flakes in a bowl. If you want your coco rocks to be flavored you can add a big spoonful of nutella (it's actually so much better with nutella!!), peanut butter, marmalade or honey.

  • In another bowl beat the egg white

  • Incorporate the egg white to the coco-sugar(-nutella) mix with the ball whisk.

  • Lay some parchment paper on the cookie sheet.
  • Make little balls of batter with your hands and arrange them on the cookie sheet.

  • Shape the balls into pyramids or whatever shape you want.
  • Put in the oven 15 min at 180°C (350°F).




  • All Done!!
